Loaded Sweet Potato Rounds
Ingredients: (yields about 4 servings)
2 large sweet potatoes
1 1/2 Tbsp Virgin Olive Oil
1 tsp garlic powder
1 tsp chili powder
1 tsp onion powder
1 tsp kosher salt
Hot sauce
Fat-free or 2% shredded Mexican cheese
3 green onions
1/2 cup light sour cream (or vegan sour cream)
Instructions:
Preheat the oven to 450F.
Cut the sweet potatoes into 1/4-inch round slices.
Place the slices in a large bowl and sprinkle with olive oil, garlic powder, onion powder, chili powder, and salt. Stir until all potatoes are evenly coated.
Place potatoes evenly on a large baking sheet with parchment paper or spray with non-stick spray. (make sure potatoes are not overlapping)
Bake for 10 minutes, and then remove from oven, and flip potatoes to the other side. Cook for another 10 minutes.
When potatoes are nice and crispy, remove from oven and add a dot of hot sauce on each round. Top each of the round with shredded cheese and wait a few minutes for the cheese to melt.
Place the rounds on a platter and top with a dollop of sour cream and green onions.
