No-Bake Cookie Dough Bites

Ingredients: (yields 30 bites)

  • 3 cups almond flour

  • 1/2 cup coconut oil

  • 1/2 cup Keto maple syrup - ChocZero brand (or can substitute for pure maple syrup or agave nectar)

  • 1 cup chocolate chips

  • 1/4 cup Rainbow Sprinkles

  • 1 tsp vanilla extract

Instructions:

  1. Line a plate with parchment paper and set aside.

  2. In a microwave-safe bowl or stovetop, add your coconut oil with maple syrup and vanilla extract and heat until melted. Whisk together until combined.

  3. Add your almond flour and salt and mix very well, until a thick, crumbly texture remains. If the batter is too thin, add a little extra almond flour. Fold in chocolate chips and rainbow sprinkles.

  4. Using your hands or a cookie scoop, form 20 balls of cookie dough. Place each ball on the lined plate and refrigerate until firm.

  5. Best stored in fridge for up to 2 weeks!
